If you want a chili worth winning competitions that is not your standard chili recipe, this is definitely one you should try!
Ingredients:
- 2 Packages of Bacon (cooked, diced)
- 2 Rotisserie Chickens (cooked, shredded)
- 2 Tbsp. Olive Oil
- 4 Poblano Peppers (seeded, diced)
- 4 Jalapeno Peppers (only 3 seeded, diced)
- 1 Large yellow onion
- 2 Tbsp. minced garlic
- 2 tsp. cumin
- 2 Tbsp chili powder
- 2 tsp. onion powder
- 2 – 10 oz. cans of Rotel
- 4 cups chicken broth
- 3.5 oz Chipotle Peppers in Adobo (about half a can)
- 2 – 1 oz. package ranch dressing mix
- 2 – 8 oz. package cream cheese (cubed)
- 3-4 Tbsp Siracha
- Shredded Cheddar Cheese
- Crushed Cool Ranch Doritos
Instructions:
- Heat olive oil on medium, medium-high heat. Sauté peppers for 5-10 minutes until softened. Set peppers to the side. While peppers are sautéing, blend together the chicken broth and chipotle peppers in adobo.
- Add more olive oil if needed. Add onions and sauté for 3-4 minutes until softened. Add garlic and sauté for 30 more seconds.
- Add back in the sauteed peppers.
- Add cumin, chili powder, and onion powder and cook for an additional minute.
- Add in rotel, chicken broth and chipotle peppers mixture, ranch dressing mix, chicken and bacon. Mix together and simmer for an hour.
- After an hour, add in cubed cream cheese and cook for an additional 30 minutes or until cream cheese is mixed in.
- Taste for heat level, if need additional spice add in an additional 3-4 tbsp of siracha.
- Serve with shredded cheese and crushed cool ranch Doritos.
Tips:
- Store made Rotisserie Chicken is an easy way to add chicken into this recipe. You can also smoke a couple chickens if you have access to a smoker to add a smokey flavor to the chili. Cooking up some chicken breasts and then shredding them can also be used, just season them with spices of your liking.
- If poblano peppers are not available, green peppers can be used instead.
- Instead of using siracha, additional chipotle peppers in adobo can be blended in the chicken broth to add additional heat.
